Almond Flour Banana Bread

Is there anything better than the smell of a warm loaf of banana bread sitting on the countertop fresh out of the oven? Yea, I can’t think of a single thing. And to be honest, it’s really the main reason I buy bananas at the grocery store. While I enjoy a slice of classic banana bread on occasion I prefer something that won’t make my energy crash on most days, so this almond flour variation has become a new go-to. If you didn’t know what was in it you totally wouldn’t even know. If you end up with extra almond flour I definitely recommend trying almond flour pancakes, swapping almond flour in salmon cakes and I’ll do my best to get my almond flour thumbprint cookie recipe posted asap – promise!

Almond Flour Banana Bread

Ingredients:

3 Bananas (let them get good and ripe)
3 Eggs
1 tsp Vanilla Extract
2 tbsp Coconut Oil
1/4 cup Honey
1/4 cup Coconut Flour
3/4 cup Almond Flour
1 tsp Baking Soda
pinch Salt
1/4 cup Coconut Flakes
1/2 cup Chocolate Chips

Directions: Whisk together the mashed banana, eggs, honey, vanilla, and melted coconut oil. Stir in the rest of the ingredients. Bake in a 350 degree preheated oven for 30-40 minutes or until a knife comes out clean. Makes 2 small loaves!
