Chocolate Covered Strawberry Smoothie

I love smoothies as a simple way to add in a good balance of protein and healthy carbs on regular macro days! My chocolate covered strawberry smoothie is one of my favorites – it’s slightly sweet, chocolaty and nice and creamy, perfect for a hot summer day!

Chocolate Covered Strawberry Smoothie

Ingredients:

1 cup of frozen strawberries
2 tbsp unsweetened cocoa powder
4-6 drops liquid stevia
1 1/2 – 2 cups unsweetened vanilla almond milk

Directions:

BLEND – add more almond milk to reach desired texture

stir in 1 tbs chia seeds + serve!!

ps if you have spinach add a handful¬†ūüôā

Eggplant Caponata AHP 029

Springtime means a bounty of new ingredients coming into season and one recipe I look forward to once spring arrives each year is my eggplant caponata. A hearty combination of eggplant, bell pepper and spinach with sweet, chewy raisins and tangy red wine vinegar piled atop a crusty baguette smeared with goat cheese. Each bite is full of flavor and oh so satisfying. I love packing eggplant caponata for a picnic by wrapping each sandwich in parchment paper and serving it alongside fresh fruit, some cut up veggies and of course, wine!

Cucumber Mint Spritz

The second the weather gets warm and I open the windows to a fresh breeze blowing through the house I immediately think cocktails on the patio. Anyone else? It’s crazy how the weather shifts not only my mood but also what my body craves. Bare feet, lighter meals, lots of walking, and oh yea – cocktails. While I am a total margarita (freshly squeezed with extra jalapeno – of course) or muddled mint mojito (extra lime and light simple syrup), those are more special occasion cocktails in my mind.¬† So when it’s Monday and I’m in my bare feet with¬† Brazilian Soul Radio blaring on Pandora and the breeze blowing through my house I want something a little simpler to take out and sip on the patio at promptly 5 pm (I like to think of it as a little mini work-break-happy-hour).

Chia Pudding

One of the struggles I see so often with ladies, especially when carb-cycling (and especially on low carb days)¬† is not getting enough fiber! And while veggies are my favorite source of fiber it’s amazing when you cut out the whole grains how many veggies you have to consume to get that 25 + grams of fiber a day. Enter chia pudding. It’s easy to make, super low carb and super high fiber. It’s basically a low carb day lifesaver!

Cabbage and Noodles

With St. Patrick’s Day less than a week away I figured I would share my go-to tradition of Haluski or cabbage + noodles. Haluski is a traditional Polish dish made of fried cabbage and egg noodles. It bakes up into a dish of buttery comfort food. Why I make it for St Paddy’s Day? No idea haha. Maybe because of the cabbage?? Regardless, it’s a comfort meal in my house and it couldn’t be easier. If I am getting fancy I make it with fresh egg noodles (either homemade or storebought) but you can also use dried fettuccine. And if you’re cooking up the whole pound follow the same instructions just pick up a large cabbage instead of a small one and use a little extra butter. This dish also reheats extremely well so I always make extra! Give it a try and let me know what you think. Come Sunday you’ll most likely find me with a big ole’ bowl of this stuff + a Jameson cocktail (still trying to figure out what that might be).. stay tuned!

Almond Flour Banana Bread

Is there anything better than the smell of a warm loaf of banana bread sitting on the countertop fresh out of the oven? Yea, I can’t think of a single thing. And to be honest, it’s really the main reason I buy bananas at the grocery store. While I enjoy a slice of classic banana bread on occasion I prefer something that won’t make my energy crash on most days, so this almond flour variation has become a new go-to. If you didn’t know what was in it you totally wouldn’t even know. If you end up with extra almond flour I definitely recommend trying almond flour pancakes, swapping almond flour in salmon cakes and I’ll do my best to get my almond flour thumbprint cookie recipe posted asap – promise!
