A lot of you have reached out since signing up for TRIM and told me that your biggest struggle with healthy eating is that you’re busy and don’t always have time to cook. My tip for that, batch cook. Pick 2-3 recipes per week and double or triple them to have simple meals to reheat all week long. Here are a few of my go-to A Healthy Passion recipes to batch cook !
I love to double this one and use it as is for low carb days and then throw in a tortilla or over some rice for regular macro days. You can even serve it in romaine lettuce hearts add greek yogurt on top for low carb tacos.
This one already makes a pretty large portion so I will typically just add another can of beans and more veggie stock to stretch it out to 4 portions. It reheats really well and makes for cozy meal on a busy weeknight!
This recipe is so simple to grab and go. For low carb days I will sub some rotisserie chicken in for the chickpeas. I’ll double this one and have 4 salads ready to go whenever I need them!
This one is easy to double and add some grilled chicken or fish to for dinner and throw over some spinach for lunch! I also will portion it out into snack size portions and keep in mason jars for grab and go.
This kale salad stays well in the fridge all week long. I will often break one recipe of it up into three lunches for the week. Also, I love to cook 4 chicken breasts when I make this one so I have extras to add to other meals.
Meal planning and staying on track with nutrition is one of the K E Y reasons why our TRIM ladies get such incredible results in such a short period of time. I hope this has inspired you to try to batch cook a few recipes this week + let me know how they turn out.
