Lime-Cilantro Salmon with Crispy Roasted Broccoli

Perfectly pan-seared salmon bathed in the most luscious lime-cilantro garlic butter and served with crispy broccoli that will convince anyone to become a broccoli convert!

Ingredients:
3/4 lb Salmon
2 stalks Broccoli
1 Lime (Zest and Juice)
1/2  bunch fresh Cilantro
2 Garlic cloves

Pantry:
Olive Oil
Celtic Salt
Red Pepper Flakes
Kerrygold Butter

Tools:
Knife
Cutting Board
Skillet
Baking Sheet
Parchment Paper
Bowl
Microplane

Directions:
1. Bring 1 1/2 tbsp of Kerrygold to room temperature in a bowl. Preheat the oven to 425 degrees. Cut the stalk from the broccoli and then slice the florets into thin slices. Spread them out on a parchment-lined baking sheet and drizzle with olive oil. Season with Celtic Salt and red pepper flakes. Smash 1 garlic clove and toss that on as well. Bake for 15 minutes until brown and crispy.

2. Zest and juice 1/2 of the lime into the bowl with the butter. Mince 1 garlic clove and finely chop 2-3 tbsp of cilantro and those in. Stir everything to combine. Season with a pinch of Celtic Salt and red pepper flakes. Set aside.

3. Pat the salmon dry with a paper towel and season with Celtic Salt. Preheat a skillet with a drizzle of olive oil. Sear the salmon skin-side up for 4-5 minutes, flip and cook for 1-2 minutes before adding the butter on top. Cook for another 1-2 minutes to let the butter melt over the salmon.

4. Plate up the broccoli, roughly chop a little bit more cilantro and sprinkle it over the top. Place one salmon fillet on each plate and serve!         

Prep Ahead: You can prepare this one in advance and lightly warm in the oven!
