My Go To Healthy Summer Picnic

Happy Friday! Summer is in full swing and I don’t know about you ladies but I have picnics on my mind. It’s the perfect summer date. Pack up the dogs, some of my favorite canned rose or chardonnay, a cute blanket and of course, a healthy picnic and you’ve got the ultimate summer date night.

Here’s what’s on my menu:

cut watermelon with a pinch of salt, a little lime zest and some fresh mint

green beans I boil until tender, toss into an ice bath and season with a drizzle of olive oil, Celtic salt, red pepper flakes and slivered almonds!

and Eggplant Caponata Sandwiches. They’re easy to prep ahead, hold up well when transported and are great served room temperature or chilled. Oh and you can easily add them to your list and track them using the code AHP 029 in MFP 🙂
