One Pot Italian Chicken Sausage and Rice AHP1352

Ingredients

12 oz Mild Italian Chicken Sausage

1 Sweet Onion

3 Garlic Cloves

3/4 c Jasmine Rice

1 tsp Italian Seasoning 

2 cups Spinach

1/4 c Basil 

 

Pantry

Olive Oil

Celtic Salt

Red Pepper Flakes

Veggie Stock Cube

 

Directions:

Add 1 tbsp olive oil to a pot or deep skillet (with a lid) over medium heat. Add the diced onion, thinly sliced garlic and sliced sausage. Season with a pinch of celtic salt and red pepper flakes. Cook 4-5 minutes until onions are softened and sausage has some color. 

 

Transfer to a plate and set aside. 

 

To the pot or deep skillet add 3/4 c rice, 1 tsp of italian seasoning and 1 3/4 c water. Stir in a veggie stock cube and season with a pinch of celtic salt and red pepper flakes. Put the lid on and bring to a boil. Reduce heat and simmer 8-12 minutes until the water is absorbed. 

 

Once the rice has absorbed the water remove the lid and stir in 1/4 cup water, 2 cups of spinach and the sausage onion mixture. 

 

Cook to wilt the spinach and warm the sausage through. Add 1/4 c roughly chopped basil, taste, adjust seasonings and serve!
