These pancakes can easily be prepared in advance and reheated in the oven or toaster.
Add the oats to a blender and pulse to turn into a flour.
Add 2 bananas, 1/2 c cottage cheese, 2 eggs, 1/2 tsp baking powder, 2 tsp vanilla and blend until smooth. Add a pinch of celtic salt.
Add 1/2 tbsp butter to a skillet over medium heat and add scoops of the batter.
Cook until the pancake begins to bubble. Flip and cook another 2-3 minutes until cooked through.
Continue until all of the batter is gone.
Serve however you like. I like to top these with more butter, maple syrup and some fresh fruit!
