Gnocchi with Mushrooms and Sun Dried Tomatoes AHP239

We toss fluffy toasted gnocchi, sautéed cremini mushrooms, creamy white beans and wilted baby kale in a buttery garlic sauce and finish with chewy sun-dried tomatoes for a 15-minute fridge-to-table weeknight delight!

  • Speed it up: Buy sliced mushrooms!

Greek Salad in a Jar AHP617

The perfect busy weeknight meal or prep-ahead lunch, we combine marinated chickpeas with cucumber, tomato, Kalamata olives, feta and romaine lettuce for the ultimate salad on the go! Plus, there’s just something so fun about serving meals in a jar!

Quinoa Apple and Spinach Salad with Hazelnuts AHP565

Something about fall makes us think of foraging. Our minds wander to leaf-lined roads and paths with small animals busily burrowing and dutifully digging up any tasty morsels they can find before the winter kicks in. And if we were to forage ourselves, we like to think we’d be in the hunt for nuts, fruits and berries and after rooting out some apple, hazelnuts and cranberries, we’d then realize that we’re human and run inside, combine those ingredients with quinoa, spinach and lemon and create the perfect fall salad!

  • Speed it up: Cook the quinoa up in advance!

Mexican Quinoa and Black Bean Salad AHP339

This is a quinoa salad you’ll want to make over and over again. We take tender black beans, fresh cilantro, crunchy bell pepper and fluffy quinoa and toss everything in a fajita-style citrus vinaigrette for a light yet hearty meal perfect for weekday lunches or dinner in a hurry!

  • Speed it up: Cook the quinoa up in advance!

Chicken Thighs with Olive and Orange Spinach Salad AHP 002

A light yet satisfying dish, I love the combination of juicy oranges and salty Kalamata olives with the rosemary-infused chicken thighs offering a final herbaceous pop!

This bright and colorful dish is a mouth-watering combo of crisp bell peppers and tender ground beef seasoned with fresh ginger, basil and lime for a Thai-inspired treat that’ll keep your taste buds guessing!

No matter how busy your weeknight, we believe that everyone has time for a 15-minute meal. And this tasty combo of fajita-style ground beef cooked with tender carrots and broccoli and finished with fresh cilantro and lime only requires 1 skillet, 15 minutes of cooking and 5 minutes of clean-up. Who says healthy cooking has to be time consuming?
