My Go-To Prep Ahead Meals

Prepping ahead can be a key tool to help you stick to your healthy lifestyle no matter how busy life get. Today I want to share some of my  F A V O R I T E  quick and easy A Healthy Passion meals perfect for those busy weeknights, lunches or those days when you just don’t want to cook! Each of them can either be easily reheated or served cold or at room temp!

Chicken with Marinated Lentils AHP233
We combine lemony, pan-roasted chicken with delicious marinated lentils for a light but flavor-filled weeknight warmer. And if you’re not a fan of fiber-rich, nutrient-dense lentils, then this is the recipe that will make you fall in love!      

**This recipe gets better as it sits so making it in advance is perfect. The chicken is best served at room temperature or reheated in the oven!

Quinoa Kale Salad AHP014
A super simple yet incredibly zesty kale salad that combines the bright flavors of apples and cranberries with quinoa and sunflower seeds to satisfy your taste buds and hunger alike!

*** This recipe will keep in the refrigerator for up to a week, if it drys out just add a drizzle of olive oil and squeeze of lemon juice!

Cabbage Roll Soup AHP224
Our take on cabbage rolls in soup form, this dish is a combination of pork sausage and beef stewed with melt-in-your-mouth cabbage and sweet onion in a tomato-based broth. This recipe makes generous leftovers so it’s perfect for lunch the next day!

*** When reheating soups I recommend doing so on the stovetop. If they need liquid just add a splash of water!

Tuscan Ribollita AHP212
Meaning “reboiled,” this soup is one of our absolute favorites. It’s a big pot of veggies simmered in a delicious tomato-herb broth with a special ingredient that elevates a simple dish to a simply great one! Finished with toasted bread, all that’s missing is a blanket and a glass of wine. Plus, this soup is amazing for a crowd or reheated the next day as leftovers!

Beef-Stuffed Peppers AHP069
Tender roasted bell peppers stuffed with a hearty filling of mushrooms and beef stewed in a fajita-style tomato sauce.

*** This recipe reheats really well in the oven, if you’re prepping it in advance just stuff the peppers and bake before serving. The spinach is best done right before serving & if you want to do the entire dish in advance just fold some spinach into the meat mixture.

Sausage Zucchini Boats AHP147
While zucchini aren’t the greatest seafaring vegetable, they do a wonderful job of sailing to the source of your hunger when stuffed with a sausage/tomato filling and baked until tender and delicious!

*** These are best reheated in the oven!

Quinoa with Asparagus and White Beans AHP060
A simple, healthy and zesty springtime salad with lemon and basil unleashing the flavor of asparagus, white beans and quinoa!

Greek-Style White Bean and Barley Salad AHP412
A fresh, light springtime salad that’s loaded with a variety of warm weather flavors and textures like chewy barley, creamy white beans, bright lemon and crisp cucumber. Νόστιμο!

Lemony Veggie Pasta Salad AHP441
We love a good pasta salad and we also love that this meal is delicious served hot, cold or room temperature. But as much as we love pasta salads, subbing Israeli couscous in for pasta and loading the salad with veggies, pine nuts, lemon and marinated mozzarella cheese makes for an unforgettable salad you’ll want to make again and again! And if couscous is so good that they named it twice, you’ll be calling this dish couscouscouscouscouscouscouscous…

Lemony Lentil Soup with Baguette AHP037
A light, lemony lentil soup that comes together in under 30 minutes and makes for the perfect weeknight meal.

*** This one is best reheated on the stovetop, add a splash of liquid if needed!

Chicken Cacciatore AHP294
“Cacciatore” means “hunter” in Italian. The term “alla cacciatore” refers to a meal prepared “hunter-style” with onions, herbs, usually tomatoes, often bell peppers and sometimes wine. For our version, we take chicken drumsticks, brown them and then stew them in a sauce of garlic, crushed tomatoes and thyme until the meat is falling-off-the-bone tender!

*** I love to cook this one in my dutch oven and just keep the whole pot in the fridge and reheat on the stovetop or in the oven!
