On the Menu:
Preheat the oven to 425 degrees.
Prep the ingredients for the Autumn Sheet Pan Chicken and pop it into the oven set the timer for 25 minutes.
Next, start working on the sauce and the meatballs for the Turkey Meatballs with Basil.
Once the meatballs are in the sauce cut up the bacon and dice the apple for the Autumn Sheet Pan Chicken. When the timer goes off you’ll add those to the pan and pop back into the oven.
Preheat a skillet over medium heat with a drizzle of olive oil, season the chicken breasts for the Mediterranean Chicken and sear them for 4-5 minutes per side.
While that’s happing, dice the cauliflower for Pork Chops with Mashed Cauliflower and add it to a pot with 1 cup of water and 1/2 a veggie stock cube. While that’s simmering you’ll toss the tomatoes and oregano for the Mediterranean Chicken on to a baking sheet and pop into the oven.
At this point, the Autumn Sheet Pan Chicken should be almost finished cooking.
While you’re waiting on the cauliflower to finish cut 4 cloves of garlic, thinly slice the zucchini into ribbons and cut the asparagus into bite-sized pieces.
Toss the skillet with the chicken breasts into the oven.
Once the cauliflower is finished transfer it to a food processor reserving the liquid. Refill the pot with water to cook the orzo.
Check on the meatballs they should be almost done.
Finish the Orzo.
Top the Mediterranean Chicken with the burst tomatoes.
