Almond Flour Banana Bread

Is there anything better than the smell of a warm loaf of banana bread sitting on the countertop fresh out of the oven? Yea, I can’t think of a single thing. And to be honest, it’s really the main reason I buy bananas at the grocery store. While I enjoy a slice of classic banana bread on occasion I prefer something that won’t make my energy crash on most days, so this almond flour variation has become a new go-to. If you didn’t know what was in it you totally wouldn’t even know. If you end up with extra almond flour I definitely recommend trying almond flour pancakes, swapping almond flour in salmon cakes and I’ll do my best to get my almond flour thumbprint cookie recipe posted asap – promise!

Perfectly Fluffy Quinoa

Quinoa is one of our favorite high protein carbs to snack on + use in our meals for TRIM and it’s freaking delicious… so I figured it might be helpful to teach you how to make it perfectly fluffy!

Tools Required:

Rice Cooker – I have a couple of 6-cup rice cookers and couldn’t live without them. I cook every single grain in mine for no-fuss results every time. Plus, they keep your grains warm after cooking until you’re ready to use!

Measuring Cups – Exact measurement is key when cooking grains so I use both a wet and a dry measuring cup to be as precise as possible!

Football Season Entertaining {build your own nachos bar}

Fall is officially here and with the transition of seasons comes a new reason to entertain. And that reason, my friends, is football season. Whether you’re a football fan or not I am sure we can all agree that football food is some of the best. So while I love a good game, my main focus is on what I can cook that’s both simple and tasty to keep everyone, including myself, happy.

A go-to for any party is some sort of dish that can be prepped in advance and people can sort of help themselves. More often than not that’s some kind of cheese and charcuterie board but I took a similar concept when designing my “build your own nachos bar” and I find it to be  relatively effortless, yet people pleasing way to entertain guests.

Fajita Beef with Broccoli

No matter how busy your weeknight, we believe that everyone has time for a 15-minute meal. And this tasty combo of fajita-style ground beef cooked with tender carrots and broccoli and finished with fresh cilantro and lime only requires one skillet, 15 minutes of cooking and 5 minutes of clean-up. Who says healthy cooking has to be time-consuming?
