I’ve had a lot of requests for batch cooking recipes or recipes you can prep once and eat all week long so today we’re diving into 5 recipes that I love to prep for the week and what I do to change things up so I never get bored!
A lot of you have reached out since signing up for TRIM and told me that your biggest struggle with healthy eating is that you’re busy and don’t always have time to cook. My tip for that, batch cook. Pick 2-3 recipes per week and double or triple them to have simple meals to reheat all week long. Here are a few of my go-to A Healthy Passion recipes to batch cook !
Today it’s time to chat meal prep. Especially because of the New Year, every time hop on Instagram, I see post after post of containers filled with healthy food for the week – cue instant overwhelm! I And while I don’t technically meal prep all of my meals in advance (I rarely have 2-3 hours free on a Sunday to spend in the kitchen nor do I want to put all of my meals in plastic containers to reheat) I do like to prep elements of my meals to speed up the process on those busy weeknights! I call it lazy meal prep. I avoid the overwhelm of doing it all at once but when it is time to get dinner on the table my cooking becomes a whole lot simpler!

1 – Get Organized. Put together a game plan and stick to it. Write out your menu, make notes on what can be easily prepped in advance and reheated or even partially prepped (I shave my brussels sprouts days in advance and store them uncooked in tupperware). I also like to look at what takes time in the oven vs stovetop so I know how to best utilize my limited space and then I like to look at cooking times so I know when to start each dish to make sure they all come together at once.
Prepping ahead can be a key tool to help you stick to your healthy lifestyle no matter how busy life get.
